Honey is sweet and appetizing, a source of carbohydrates and is high in trace minerals.

Each type of honey contains different sugars that changes according to the source of nectar and the small amounts of other substances, such as minerals, vitamins, proteins and amino acids. So depending of the variety of plants that bloom mainly in each region, we get types of honey with different aroma, taste and colour. 

The darker honeys generally have a stronger flavour and are high in minerals, whereas the flavour of paler honey is more delicate and floral.

Although the honey of a thousand flowers is the classic, the result of freely mixing different flower nectar by bees, flower blossom honey or "Monofloral" is where one variety of nectar dominates: Rosemary, Orange, Eucalyptus or Chestnut. This is made possible by moving our hives from earlier to later areas as rain and weather conditions vary in each season.

Each single-flower honey reflects the properties of the plants from which it comes; providing colour, flavour and aroma enriches the pleasure of quality honey.
